Organic Jaggery Process

Discover the intricate process of creating 100% organic jaggery from start to finish.

Step 1 : Soil Preparation
  • Firstly, we conduct a soil test to determine pH, nutrient levels, and organic matter content of the soil.

  • Ideal pH for sugarcane is between 6.0 and 6.5. We ensure that the soil has proper pH.

  • Then, we add organic matter like compost or well-rotted manure to improve soil structure and fertility.

  • Also, we use green manure crops (like legumes) to fix nitrogen in the soil.

Step 2 : Seed selection
  • After soil preparation, the next step is to select disease-resistant, high-yielding sugarcane varieties.

Step 3 : Planting
  • Now comes the third step. In it, we cut healthy sugarcane stalks into setts (pieces) with at least 2-3 buds per sett.

Step 11 : Final processing
  • The thickened juice is removed from the heat and transferred to another container for cooling.

  • Stirring is continued as it cools to ensure uniformity and to prevent crystallization.

  • The thickened syrup is poured into molds or onto flat surfaces lined with parchment or greased surfaces to set.

  • Then the jaggery is allowed to cool and harden in the molds or on the flat surfaces.
