Organic Jaggery Process
Discover the intricate process of creating 100% organic jaggery from start to finish.
Step 1 : Soil Preparation
Firstly, we conduct a soil test to determine pH, nutrient levels, and organic matter content of the soil.
Ideal pH for sugarcane is between 6.0 and 6.5. We ensure that the soil has proper pH.
Then, we add organic matter like compost or well-rotted manure to improve soil structure and fertility.
Also, we use green manure crops (like legumes) to fix nitrogen in the soil.
Then, the soil is plowed to a depth of about 12-15 inches to loosen it.

Step 2 : Seed selection
After soil preparation, the next step is to select disease-resistant, high-yielding sugarcane varieties.
We use certified organic seed cane to ensure it is free from synthetic chemical treatments.
Step 3 : Planting
Now comes the third step. In it, we cut healthy sugarcane stalks into setts (pieces) with at least 2-3 buds per sett.
Plant setts in furrows 4-6 inches deep.
Space rows 3-4 feet apart, and place setts 1.5-2 feet apart within the row.
Step 4 : Organic Fertilization
In 4th step, we use compost, well-rotted manure, bone meal, and other organic fertilizers to supply nutrients.
These fertilizers are applied based on soil test results and crop requirements.
We also apply organic mulch (like straw or sugarcane leaves) to conserve moisture, control weeds, and add organic matter to the soil as it decomposes.
Step 5 : Irrigation
We provide consistent irrigation, especially during dry periods, but avoid waterlogging.
Drip irrigation is ideal for efficient water use and disease prevention.
Step 6 : Pest and Disease Management
We Monitor for pests regularly.
We use biological control agents like beneficial insects (e.g., ladybugs for aphids).
Also, we use organic-approved pesticides like neem oil or insecticidal soaps if necessary.
Step 7 : Harvesting the sugarcane field
We Harvest sugarcane when it reaches peak maturity, depending on the variety and climate.
Then, we cut the canes at ground level using a sharp machete or other cutting tools.
And at last, we remove the leaves and tops, leaving the stalks for processing
Step 8 : Harvesting the sugarcane field
We clean the harvested canes to remove any dirt or debris.
Canes are transported to the processing facility promptly to prevent deterioration.
Then the canes are processed to extract juice.
Step 9 : Clarification of the extracted juice
The juice is heated continuously to evaporate water, stirring continuously to prevent burning and sticking.
As the juice thickens, the color will deepen from pale yellow to golden brown.
Consistency of the boiling juice is tested by dropping a small amount into water. When it forms a soft ball, it indicates the juice is ready for the next step.
Step 10 : Concentrating the juice
We pour the extracted juice into a large, shallow pan or container.
The juice is heated over a fire or furnace to initiate the clarification process.
The scum is skimmed off regularly that forms on the surface regularly.
Step 11 : Final processing
The thickened juice is removed from the heat and transferred to another container for cooling.
Stirring is continued as it cools to ensure uniformity and to prevent crystallization.
The thickened syrup is poured into molds or onto flat surfaces lined with parchment or greased surfaces to set.
Then the jaggery is allowed to cool and harden in the molds or on the flat surfaces.
We inspect the final product for consistency, color, and purity.
Finally, we conduct the necessary quality tests to ensure the jaggery meets organic standards.
